I went to the Farmers Market on Tuesday, and found fresh Green Beans for $1.49/lb. That’s a pretty good price : ) But what can I make with Green Beans….I was thinking for what to make….. It was pretty difficult to decide; should I make authentic Japanese food or other Asian food? (Oh, you know how I LOVE Asian Food. Especially Japanese food.) So I finally decided to make a Thai Food, Thai Spiced Tofu.
You know making Thai food is pretty difficult, but this ‘Thai Spiced Tofu‘ is SUPER EASY to make and guaranteed the taste is AWESOME! It’s a little sweet, but Thai red curry paste brings a good flavor. This is a simple one plate meal, but trust me you will LOVE this : ) Try this ‘Thai Spiced Tofu‘ for dinner and let me know how did you like it : )
Ingredients (Serving for 2):
8 ounce firm Tofu, cut into four 1/2 inch slices
3 tablespoons Thai red curry paste (You can buy in the Asian section of most supermarkets…I bough from Walmart)
3 tablespoons sugar
1/2 pound Green Beans
1/2 cup vegetable broth
1 tablespoon vegetable oil
1 cup cooked rice
- Place the Tofu between layers of paper towels and weight them down with heavy skillet to remove excess water. Set aside to drain for 10 minutes.
- Combine the curry paste and sugar. Put half this sauce in a resealable plastic bag. Add the Tofu, seal and set aside for 15 minutes.
- In a saucepan, combine the Green Beans, Vegetable broth, oil and the remaining the sauce you made it in #2. Simmer until the beans are tender. About 5-10 minutes. Cover to keep warm.
- Lightly coat a nonstick skillet with vegetable cooking spray and place it over medium heat. When it gets hot, add the Tofu and cook until golden (About 4 minutes per side.) Serve with the Green Beans and Rice : ) Enjoy!
