Vegetarian Burritos

Vegetarian Burrito2During the busy weekdays, my brain is always thinking and doing so, what I cook it needs to be simple& easy& healthy.
Lately I had been craving Burritos so bad, but you know making Burritos takes time to cook and it’s not really healthy. So I was thinking “What about making a Vegetarian Burrito.” It’s much healthier and only takes 25 minutes to make. That sounds perfect to me : )

This ‘Vegetarian Burrito’ was very delicious, 4 Cheese Mexican Blend Cheese brings a delightful flavor, and lime & cumin leave a pleasant taste. And those flavors are perfectly mached with rice and black beans. (I’m not a big fan for beans, but black beans in this Burrito are so yummy! It’s so GOOD : ) TRUST ME! )

Ingredients (Serving 8):

1/2 cup chopped onion

2 garlic cloves, minced

1 jalapeno pepper, seeded and chopped

1 (8 ounce) package sliced fresh mushrooms

1 (6 ounce) package fresh baby spinach leaves

1 tbs fresh lime juice

1/2 tablespoon kosher salt

1/2 tablespoon ground cumin

1 1/2 cup cooked rice (You also can use brown rice, if you prefer)

1 (15 ounce) can black beans, rinsed and drained well

1 cup shredded reduced fat 4 cheese Mexican blend cheese

8 (8 inch) whole wheat flour tortillas

Fresh salsa (Optional)

Sour Cream (Optional)


  • Vegetarian BurritoHeat a large skillet over medium-high heat. Coat pan with cooking spray.  Add chopped onion, garlic, jalapeno, and mushrooms; saute 5 minutes, stirring occasionally. Gradually add spinach; cook 1-2 minutes, stirring until wilted. Stir
    in lime juice, salt, and cumin. Add rice and bean; cook, stirring constantly. 1 minutes or until thoroughly heated. Add cheese, stirring until melted.
  • Warm tortillas (please check the  package directions.) Spoon about 2/3 cup mushroom mixture down center of each tortilla. Roll Up!
